Blueberry Banana Bread


  • 4 bananas (overripe)
  • 100g (3/4 cup) apple sauce
  • 1 Tbsp coconut oil (liquid)
  • 2 Tbsp lemon juice
  • 200g (2 1/2 cups) ground rolled oats
  • 10 Tbsp amaranth pops
  • 50g (1/4 cup) coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 fresh vanilla pod (scraped out)
  • 125g (1 1/4 cups) blueberries


  1. Purée the bananas and mix with apple sauce, coconut oil & lemon juice
  2. Blend oats to flour like consistency
  3. Add all dry ingredients to the banana apple sauce mix
  4. Fold in the blueberries (if you use frozen ones, toss them in some buckwheat flour first)
  5. Fill into a 26cm (10 inch) loaf pan (greased with coconut oil) and bake for 50 mins. at 175°C (350°F)
