Quinoa Zucchini Fritters

My new favorite clean meal 🙂 Gluten free, vegetarian and so yummy!! Tastes awesome with Hummus or a light yoghurt sauce.

Quinoa Zucchini Fritters

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Quinoa Zucchini Fritters

Ingredients

  • 185g (1 cup) Quinoa (cooked)
  • 2 medium sized Zucchini
  • 3 eggs
  • 110g (1 cup) Feta cheese, crumbled
  • 1-2 Tbsp gluten free flour (I used buckwheat)
  • Salt, Pepper, Onion, Garlic and other spices to taste
  • Coconut Oil for frying

Instructions

  1. Set aside the cooked Quinoa and let it cool.
  2. Grate the zuccini into a kitchen towel, sprinkle with salt and wait for 5-10 mins. (the salt will release the excess water) - squeeze out the excess water (in the sink).
  3. Whisk eggs well and fold in the crumbled Feta.
  4. Add in grated and squeezed Zucchini, flour and spices and stir.
  5. Add in cooked Quinoa and combine well.
  6. Heat the Coconut Oil in a large skillet.
  7. Drop the batter with a tablespoon and press on the batches.
  8. Fry over medium heat until golden and crispy.
  9. ENJOY
