These raw vegan Mini Cheesecakes are one of my favorite creations this summer! The preparation takes its time but is totally worth it and everybody loved them so far 🙂
I simply use the Raw Vegan Berry Cheesecake Recipe and spread it in cupcake sleeves – depending on the amount of crust and cheesecake filling used per cupcake, it will make about 12-16 Mini Cheesecakes.
There´s plenty of room for crust & topping variations – the crust doesn´t have to made of dates and figs – you may use dates only, or any other kind of dried fruit. Last time I made them with dried apricots and cherries and they turned out just as yummy. Same with the topping – whatever fruit you´re into will work. Cherries and strawberries were my last choice.
Tip: freeze for 1-2 hours and enjoy on hut summer days
They´re awesome to sneak some healthy dessert into your kids diet as well 😉
